Everyday Chemistry, Part 2: How to Make Foam at Home

In the functional kitchen lecithin is available in powder, liquid or pellet-like granules, and all are suitable to make a foam at home.


  • 1 Cup Champagne
  • 1 cup Orange Juice
  • 1 cup Orange Juice
  • Bag of lecithin
  • Fresh Shucked Oysters
  • Immersion blender or battery operated whipper
  • Glass mixing bowls
  • Citrus reamer
  • Combine the champagne and blood orange juice in a mixing bowl and mix in 1 tablespoon of lecithin.
  • Peel, core, and chop the apples
  • Just before you are ready to plate your oysters, buzz the liquid with a stick blender or milk frother until it's thick and frothy, putting the blades just below the surface and moving them up and down to foam the top (kind of like steamed milk for cappuccino).
  • Rake off the foamy surface with a spoon and dollop portions on top of the shucked oysters.
  • One bowl of foam
